i really love eggs benedict. what is not to love? english muffins - love. soft poached egg - love. hollandaise sauce - love love. the ham, not love. there's a possibility that someday i will start eating meat again but i will never. eat. ham. ever. that dark wrap around the outside, what is that? i will never know. there was still bacon leftover from the quiche side the other night, so ryan was happy to take care of that.
i know i could have been a lot better of a vegetarian here. like made these with spinach or some other vegetables. but the thing is that i wasn't planning on making this for dinner. but when 5:30 rolled around ryan was really hungry and i didn't feel like spending an hour in the kitchen or staring down a recipe all evening. so i think this was perfect for what we needed tonight.
and poaching an egg really is not that hard. just make sure to put vinegar in the water.
